        Regarding these egg-jokes – I really experienced something special about it. I am a linguist and do speak 6 languages. Some years ago I joined an evening class to study a language. In our class we had a subject about food. As I am vegetarian not eating any eggs, I did not know how to express it and told to the teacher: (translated) “I am an eggless vegetarian” but wanted simply to say that I am a vegetarian who does not eat eggs – the teacher turned around and started burst out laughing… oh, then I knew my mistake…

      • Yes, eggpant is a great veggie, there are thousand of different recipes. Baked with cheese and soy granules together with rice is very tasty – this we can eat together my friend 🙂 Here the recipe:

        Baking eggplants

        Wash the eggplants, cut off the ends and slice lengthwise in 0.5 cm thick slices. Line 2 baking trays with baking paper, sprinkle with salt and pepper and place in the oven at 180° convection oven for 15 minutes.

        Place the soya granules in a large bowl, pour 450 ml of boiling water over them and add 2 teaspoons of vegetable stock powder as desired. Leave to stand for 10 minutes.

        Cut onion it into small cubes and fry it in a large pan with some oil until it is nicely browned. Sprinkle the sugar over it and let it caramelize nicely. Then add the softened soy granules and fry everything well. Deglaze with the strained and chopped tomatoes. Now add the seasoning. I have used plenty of salt and pepper. Also garlic powder, chili flakes, paprika powder, oregano and thyme. Always taste to see if you are satisfied… Ready when you are ready to eat.

        Provide a large casserole dish. Line it with aubergines, cover with sauce and continue like this. Before everything is used up, rub a layer of gouda over a layer of sauce. Then continue to layer and finish with sauce. Rub another layer of cheese over it and bake in the oven at 200° Celsius for 15 minutes.
        Serve with rice or enjoy without a side dish.
