Eat healthy by baking this simple yet delicious chocolate-zucchini cake:
Method:
1. Cream 1/2 cup butter and 1 cup superfine sugar until fluffy and light.
2. Slowly beat in 2 eggs.
3. Sift 1 1/4 cups self-raising flour, 1/4 cup cocoa and 1/2 tsp cinnamon.
4. Add flour into butter mixture with 1/4 cup milk, 1 cup grated zucchini and 1/3 cup chopped walnuts.
5. Spread into greased and paper-lined loaf tin.
6. Bake at 350°F (180°C) for 40 minutes.
